Ingredients:
6 large carrots
1/4 cup parsley, finely chopped
2 tbs sesame seeds
1 lemon, juiced
5 tbs sunflower oil, or another oil with little flavor
salt & pepper
Top & tail your carrots, peel them and chop into matchsticks. If you have a mandolin this makes the job even faster. Place in a bowl with your parsley and sesame seeds and mix. To make your vinaigrette mix the olive oil, lemon juice, salt and pepper in a screw top bottle and shake. Pour over salad.
Note: this recipe makes enough dressing for 2 big salads.
